Delicious and Creamy Cheese Brussels Sprouts and Bacon Bake is the ultimate comfort food, loaded with two types of cheese for so much flavour. It’s just creamy, cheesy, flavoursome and so good, making it one of the best ways to eat brussels sprouts. Plus, it’s so easy to make, from prep to table in under 30 minutes.
Ingredients
- 500g brussels sprouts
- 200g thick cut sliced bacon
- 2 tbsp butter
- 1 Diced onion
- 1 Finely crushed garlic
- salt and pepper
- 2 tbsp Mascarpone cream
- 100g Grated Cheddar
- 50g Grated Parmesan
Preparation
- Preheat oven to 200 C.

Add butter or oil to a cast-iron skillet (or oven safe skillet) over medium high heat. Add onions and sauté until soft, and remove from the skillet. Add Brussel sprouts and bacon to the same pan, seasoning, salt and pepper. Sauté until the Brussel sprouts and Bacon are crispy and start to char, return the Onions to pan. Add Garlic, and stir cook through until fragrant.

Turn off the heat, and add the Mascarpone, Cheddar and Parmesan, stirring to combine and until the cheese is melted.

Transfer skillet into oven and bake for about 15 minutes until browned. To get that extra browned and charred on top, place under the grill on high for an extra 1 or 2 minutes. Note: keep a close eye on the grill so it does not burn.
